🍌 Chè Chuối 🍌

This classic viet dessert is something my mom loves to make. It’s got tapioca pearls so if you’re a fan of the boba texture this is similar! It can be sweet and a great way to use overripe bananas:)

time: 30 minutes

serves: 8+


ingredients:

-5 bananas

-1 can of coconut milk

-1 cup of tapioca pearls

-coconut sugar and agave (liquid sweetener) as a 1:1 ratio

-a sprinkle of sesame seeds

-2 cups of water


1) rinse the tapioca pearls with water and a drainer

2) put pearls in a pot with water to cook it (pearls will have instructions on their bag, but essentially bring to a boil)

3) add the coconut milk into the pot (get all the coconut milk out of the can by adding a little bit of water to the can and then pouring the remnants into the pot)

4) stir to combine

5) add bananas in

6) keep stirring so that the pearls don’t stick to the bottom

7) keep cooking down until pearls become translucent (they are cooked)

8) serve!
