From the title, I can assure you that we are definitely NOT eating monkeys, but rather, bananas! This breakfast is super simple and easy and great to whip up if you want something filling in a pinch!


p.s. I recommend serving/eating this with a side of milk! I had it with oat milk


time: 5 minutes

serves: 1-2


ingredients:

-1 banana (ripened to your preference, I prefer mine spotted)

-1 tortilla

-peanut butter


1). Take a tortilla (I just used a whole wheat one)

2). Scoop out some peanut butter from a jar

3). Unpeel a banana and chop into banana "coins" (I just used the spoon I used for peanut butter to cut the banana)

4). Wrap up the tortilla and eat!

heyyyy! This is a pretty hearty snack and a great way to use up overripe bananas! This is a little thicker than your average flatbread but I still love it all the same.

time: 15 minutes

serves: 4 medium sized circles


ingredients:

-2 bananas

-whole wheat flour

-1 cup of raisins (or any fried fruit really)

-1 1/2 tablespoons vegan butter


1) squish the bananas in a bowl

2) add whole wheat flour a 1/2 cup at a time until the mixture is not sticky and becomes a firm dough

3) knead, roll, and then cut into 4 pieces

4) add raisins into each individual piece and incorporate the raisins by kneading more* 5) set your pan to medium heat (~350 F or 177 C or 450 K) and then put half the butter on the pan and put two circles to cook

6) once the first two are cooked, set aside and cook the other two

7) serve!


*since this recipe doesn’t use yeast you don’t have to worry about over-kneading the dough

This classic viet dessert is something my mom loves to make. It’s got tapioca pearls so if you’re a fan of the boba texture this is similar! It can be sweet and a great way to use overripe bananas:)

time: 30 minutes

serves: 8+


ingredients:

-5 bananas

-1 can of coconut milk

-1 cup of tapioca pearls

-coconut sugar and agave (liquid sweetener) as a 1:1 ratio

-a sprinkle of sesame seeds

-2 cups of water


1) rinse the tapioca pearls with water and a drainer

2) put pearls in a pot with water to cook it (pearls will have instructions on their bag, but essentially bring to a boil)

3) add the coconut milk into the pot (get all the coconut milk out of the can by adding a little bit of water to the can and then pouring the remnants into the pot)

4) stir to combine

5) add bananas in

6) keep stirring so that the pearls don’t stick to the bottom

7) keep cooking down until pearls become translucent (they are cooked)

8) serve!
